1. Health benefits 

When our car's metal oxidizes (or rusts), it's reacting with oxygen in the air. Unfortunately, our body's molecules are vulnerable to oxidation too. This causes us to produce free radicals that contribute to signs of aging and numerous health issues.The good news is -- there's a way to help reduce our "rusting" process. I'm sure you've heard of antioxidants. But do you know why antioxidants are so important? It's partially because they help you look and feel younger -- they help support your immune system and, in turn, are a great way to say healthy and focused, with real, natural energy.

ImageBut they are also your only source of protection against free radicals -- an unavoidable byproduct of everything from sun exposure to digestion. Not to mention exposure to cigarette smoke and other environmental pollutants. Free radicals might be today's single biggest health threat -- a cause of premature aging, DNA damage and inflammation to name a few.

The best way to rust-proof your body is to eat organic food. Organic vegetables and fruit have been proven to have more antioxidants than conventionally grown vegetables. Part of the reason for this is when pesticides are not used the plants build up polyphenols to protect themselves. The polyphenolic compounds are powerful antioxidants. A pesticided plant doesn’t need to develop this natural protection.

 

2. Flavour

Organic fruits and vegetables tend to score higher in taste because they are sweeter than conventionally grown foods. Why? ImageBecause organic produce is smaller in size and higher in nutrient density. Conventional farming methods are designed to produce bigger fruits and vegetables, but increasing cell size generally adds more water, diluting the concentrations of both vitamins and natural flavors. In the absence of salt-based conventional fertilizers, organicfruits and vegetables ripen more leisurely, with more time to soak up nutrients from sun and soil. They have a higher solid content and a lower water content, which yields more flavour.

3. Environment

It is unthinkable that the natural wonders and beauty we enjoy and have come to take for granted may not exist for our grandchildren. The arctic ice is melting more rapidly than it was ever anticipated. This is a wake up call for us to take climate change seriously. It will bring more natural disasters, the extinction of species and change the way we are growing things. The 3000 mile salad will no longer be feasible because of its costs to the environment in greenhouse gas emissions. We believe that our food security lies in growing nutrient rich food locally.

Our solar greenhouse is an attempt to grow vegetables locally in a harsh winter climate. We are constantly experimenting with auxiliary heat and light on cloudy short days and minus 30 degree C nights. We are totally commited to sustainability and to promoting an organic lifestyle.
